This year’s feast takes place at the hotel’s Hector’s restaurant, and the vegan five-course meal will, as is tradition, be prepared by award-winning executive chef, Jinu Abraham.
The menu includes a red cabbage kraut, guacamole and gigante beans taco, spinach and coconut cannoli and a main of the vegetarian recipe award winning dish – peas and organic tofu stuffed potato with roasted Asadillo, caper raisin puree and salsa verde.
Dessert is a decadent raw pistachio cacao nib truffle, Valrhona chocolate pudding, sorbet with olive caramel.
The entire meal is dairy and animal protein free. Price per person is $65. Vegan wines will be available to purchase on the night.
The evening begins at 6pm with a complimentary organic hibiscus and elderflower Kombucha drink on arrival.
