Recipe – No Egg No Butter Choco Cupcake 4

Here’s my recipe for a delicious no egg no butter cupcake that should come out of the oven nice and moist.

Standard flour – 200g
Cocoa powder – 50g
Sugar – 180g
Baking soda – 1tspn
Salt – Half tspn
Veg oil (olive or grapeseed) – 6tbs
Coffee (1 cup hot water & 1-and-a-half tspn instant coffee)
Vanilla extract – 1 tbs

1) Pre-heat oven 180 degrees centigrade. Put cupcake cases in 12 hole muffin tray (use baking sheet)
2) In mixing bowl, sift flour, cocoa powder, baking soda, salt. Add sugar then mix well
3) Mix coffee, oil, vanilla
4) Add coffee mix to flour, then mix well
5) Put batter to muffin tray, then bake 15 min (or until a skewer inserted into the middle comes out clean)
6) Cool on cake rack. For extra dust, powder sugar or icing

    Hi Alessandra – Yoko says you can use ‘real’ coffee, just a shot of the strong stuff but the same amount of water as above.

    The batter didn’t rise up even a bit
    No crumbling texture
    6tbs olive oil sure ?? Too glazy mixture
    Plz post the pics atleast thw consistency

      Hi Krithika, Thanks for your comment. Yoko has baked this recipe literally dozens of times and they’ve always come up great, and she’s had excellent feedback. She suggests that as she has quite a hot oven, you might want to try again and bake for maybe 20 minutes. Better luck the second time!
