I LOVE HAVING a stash of these in the freezer at all times – perfect for afternoon tea or dessert, just pop out a few and pair with a peppermint tea. They’re super healthy for you with a bunch of incredible superfoods, and will settle any sweet craving you might have in an instant. You can also add a few drops of peppermint oil to make a nice after dinner mint ball.
Plant based, made with wholefoods, vegan, sugar free, gluten free, and suitable if you’re following a Paleo diet too [not that you would ever want to do that, of course – Ed]; no one will say no to these if you bring them to the party. Soaking the nuts will remove the enzyme inhibitors and make it easier to digest all the nutrients in the nuts, but if you run out of time for this they’ll still be awesome.
Makes 20 balls
*Always use certified organic ingredients whenever possible*
1 cup raw nuts soaked & rinsed (check out info on soaking times here) – skinless nuts like cashews/macadamias work best
1/3 cup raw cacao powder
1/3 cup desiccated coconut
1 Tbsp chocolate brown rice/pea protein
2 tsp mesquite
1 tsp maca
1/2 tsp vanilla powder
1 cup medjool dates
1 Tbsp chia seeds – soaked in 2 Tbsp water for 15mins til it forms a gel
2 Tbsp melted coconut oil
1 Tbsp yacon/coconut/agave/maple syrup
Blend all dry ingredients (excluding dates, chia seed gel, coconut oil and sweetener) in a food processor for one or two minutes until a fine crumb forms. Add dates one by one while processor is running, then add chia seed gel, coconut oil and sweetener til combined. Roll into balls then roll in your roller material of choice. Pop in the freezer for one hour, then enjoy. Keep in the freezer for optimal firm-factor.
